Auxiliary of Emerson Hospital Hosted Cooking Demonstration and Nutrition Discussion Featuring Ben and Julia Elliott, from Salt Box Farm

Recently, the Auxiliary of Emerson Hospital hosted an enjoyable and informative evening featuring husband and wife team Ben and Julia Elliott.  Ben is chef and owner at Saltbox Farm and Saltbox Kitchen in Concord, a café offering seasonal dishes featuring fresh, healthy food locally grown.  Julia is a licensed dietician and nutritionist, and is the dietician for Emerson’s Cardiac Rehabilitation program.  More than 80 guests attended their cooking and nutrition discussion at the Hanger Café at 300 Baker Avenue, Concord. 

Guests were treated to wine and hors d’oeuvres prepared by Ben and his team at Salt Box Kitchen.  Julia began the presentation with tips on healthy eating, saying, “our goal is to teach you that vegetables are fun and easy to cook; delicious as well as healthy.”  Ben demonstrated the prepping and cooking of Roasted Butternut Squash Soup and Baked Stuffed Delicata Squash. Guests enjoyed Ben and Julia’s easy back and forth conversation and tips during the presentation.  The final treat of the event was when guests were served these tasty, healthy dishes and given copies of recipes from Ben and Julia.
