Summer Chickpea Salad Recipe


Emerson’s Nutrition team shares this delicious summer salad that is easy to make at home. Enjoy!


  • 1 can chickpeas, drained and rinsed
  • ½ medium onion, finely diced
  • ½ large cucumber, diced
  • 1 cup cherry tomatoes, quartered
  • ½ cup feta cheese
  • Salt and Pepper to taste
  • 1 tsp Italian seasoning (or other herb seasoning)
  • 1-2 tbsp olive oil
  • 1 tbsp lemon juice


  1. Drain and rinse chickpeas well.
  2. Prepare onion, cucumber, tomato as above.
  3. Combine all ingredients in a bowl.
  4. Enjoy! Makes about 8 cups total.


You could add other vegetables such as bell peppers or corn. For added protein and texture, quinoa could be added. For a smoother texture, you could try an avocado diced up!
